🌿 Local Insider Note on Presicce Puglia: Welcome to our firsthand guide to Presicce Puglia and underground olive oil mills Presicce, written from our year-round life in Ugento, Lower Salento.

Just a ten-minute drive inland from the turquoise Ionian coast lies one of Salento’s most captivating hidden treasures: Presicce-Acquarica. In fact, this historic town is officially recognized among I Borghi più Belli d’Italia (Most Beautiful Villages of Italy). Furthermore, Presicce is world-renowned as the “City of Underground Olive Oil Mills” (Città degli Ipogei). It boasts a subterranean world that workers carved entirely by hand into soft limestone.

Far removed from crowded tourist resorts, Presicce-Acquarica represents the quintessence of Apulian slow living. Here, you will find sun-washed baroque facades and quiet cobbled alleys. In addition, the town offers centuries-old olive culture and authentic craftsmanship.

1. The Subterranean World: The Underground Olive Oil Mills (Frantoi Ipogei)

Beneath the elegant streets of Presicce lies an extraordinary subterranean network. In total, the town preserves more than 23 historic underground olive oil mills (frantoi ipogei). These fascinating structures date from the 15th to the 19th centuries.

During the Renaissance, Presicce became the undisputed olive oil capital of Southern Europe. Specifically, local producers made the famed olio lampante to illuminate the street lamps of London, Paris, and Naples. Farmers carved the mills deep underground for two strategic reasons:

  • Thermal Stability: The subterranean limestone maintained a steady temperature of around 18°C–20°C year-round. As a result, this natural insulation prevented the olive oil from solidifying during winter.
  • Efficiency: Workers dumped olives directly into the crushing basins through grates in the street above.

Today, visitors can descend into beautifully restored underground mills right beneath Piazza del Popolo. Inside, you can see ancient stone millstones and stables for donkeys. In addition, you can explore the quarters where the frantoiani lived throughout the winter months.

2. What to See in the Historic Center of Presicce

Above ground, Presicce is an architectural gem. Therefore, travelers should explore the historic center at an unhurried pace, as we always advocate in our Puglia Travel Guide.

Piazza del Popolo & The Column of Sant’Andrea

The beating heart of the village is Piazza del Popolo. Elegant aristocratic palazzi frame the wide square. In addition, the imposing Column of Sant’Andrea Apostolo rises in the center. Builders erected this ornate limestone monument in 1712 to honor the town’s patron saint.

The Mother Church of Sant’Andrea Apostolo

Local artisans rebuilt this magnificent Baroque church after the devastating earthquake of 1743. Today, the church features an exquisite limestone facade. Furthermore, its majestic Renaissance bell tower stands as the tallest vantage point in town.

Palazzo Ducale & The Hanging Gardens

Originally, the Normans built a medieval fortress here. Over the centuries, noble families transformed the fortress into a refined residence. Today, the palace houses the Museum of Rural Civilization (Museo della Civiltà Contadina). Moreover, it features romantic rooftop hanging gardens overlooking the historic district.

3. Acquarica and the Ancient Art of Rush Weaving (Il Giunco)

Just adjacent to Presicce lies the historic village of Acquarica del Capo. The two communities united into a single municipality in 2019. While Presicce flourished from oil production, Acquarica gained fame for the delicate craft of rush weaving (lavorazione del giunco palustre).

For centuries, local women harvested marsh reeds from coastal wetlands. Then, they wove traditional baskets, sieves, and cheese molds (fiscelle). Today, you can visit the Castello di Acquarica and the dedicated Museo del Giunco. Consequently, you can experience this rare artisanal tradition firsthand.

💡 Local Tip by Carlo & Gloria
“Presicce is our favorite spot for a relaxed evening escape from Ugento. Specifically, we suggest arriving around 6:30 PM. First, book a guided tour of the underground mills beneath Piazza del Popolo. Afterward, take a seat outside at the historic bar in the square. Order a local Salice Salentino wine with warm pittule and fresh Capocollo. Watching the local community gather for the evening passeggiata is the pure, authentic Salento you will never find in commercial guidebooks.”

4. Food & Dining Around Presicce-Acquarica

The culinary heritage here is deeply rooted in earth-to-table traditions. Unlike seafood-heavy coastal towns, dining in Presicce celebrates hearty legumes, seasonal wild vegetables, and handmade pasta.

  • Ciceri e Tria: Traditional ribbon pasta partly boiled and partly fried crisp, served with tender chickpeas.
  • Parmigiana di Melanzane: Rich, slow-baked layers of eggplant, tomato sauce, and local caciocavallo cheese.
